Food from The Hills: Rocky Road Drops

Every parent’s favourite type of baking is the type that involves no actual baking - no grabby hands around a hot oven door and no disappointment when, despite your best efforts, everything sinks. You say pessimist, I say realist - ha!

Ingredients

  •  200g milk chocolate
  • 50g good quality dark chocolate
  • 100g mixed colour mini marshmallows
  • 100g brazil nuts, coarsely chopped
  • 25g icing sugar

Method

1. Break up the chocolate into small pieces and place in a bowl over a pan of simmering hot water. Be careful not to have the bowl touching the water. Remove from heat when fully melted.

2. Add the marshmallows and nuts to the chocolate and mix together until all coated.

3. Drop a spoonful onto a baking sheet lined with parchment paper and leave to cool in the fridge for up to 2 hours.

4. Dust with icing sugar before serving.


A note:

You can use digestive biscuits instead of nuts, or indeed a mixture of your favourite nuts. Dried fruit - cranberries or glace cherries - will also boost the sweetness factor, as will a handful of Maltesers. As with all of the best recipes, you can ransack the cupboards and make this one up as you go along!
